every so i often get requests for certain dessert items, one of which is kahlua cake. i learned about this evil concoction from my mother years ago, and my hips have never been the same.

it’s an incredibly easy recipe, but people insist they can’t figure it out. so here is a step-by-step guide to the construction.

this is also a bit of a cheat recipe, as i use box cake mix.

prepare 1 box of devil’s food cake according to package directions using two round cake pans and let cool completely. while the cakes are cooling, prepare chocolate pudding and whipped cream.

next cut the cake in half horizontally so you end up with four cake rounds.

place one cake round in the bottom of a trifle bowl, or similar tall serving dish. sprinkle with kahlua and let the cake absorb the liquor.

place a large dollop of chocolate pudding on top of cake

and spread as if frosting.

next you will take a large scoop of whipped cream

and spread over the pudding.

you will repeat the layers (cake, kahlua, pudding, whipped cream…cake…)

there are four layers altogether.

i usually shave chocolate over the top, but feel free to use whatever you like!

wasn’t exactly sure what i wanted to make for dinner tonight. as i rifled through the pantry i found some beans, which i made in to some delicious frijoles refritos, and the best part was that they had no lard! i know i know, some of you might say i’m not being traditional…but believe you me, they were excellent.

i marinated some chicken breast in lime, garlic, cumin and coriander; sliced some avocado, tomato, lettuce and queso fresco; fried some corn tortillas…and voila!

loaded tostadas! my first ever, i might add =)

had a bit of a sweet-tooth as well, so i melted some butter and honey together, fried up some flour tortillas ( i love how they puff up ) and made

sopapillas!

i know…i haven’t been updating my blog as of late. what can i say? i’m lazy, but rest assured, updates and recipes are on the way as requested =)

last night i watched “anthony bourdain : no reservations” in new orleans, and i was struck by the devastation that still pervades post – katrina new orleans and surrounding areas. you see, i, like many others in the country had been under the impression that things were pretty much back to normal…

 tonight’s dinner was a tribute to those people who are busting ass trying to maintain a normal life and routine (i.e. laggie from jtv). your spirit is truly amazing.

 happy mardi gras nola!

i may be a white girl from up north, but i can cook the hell outta some dirty rice! and yes…i used chicken livers.
